Gazpacho Vinegar by José Andrés
A summer in the Andalusian city of Málaga taught us an important lesson: gazpacho is one of the greatest soups on earth. This playful seasoning vinegar, made in close collaboration with chef José Andrés with his signature Arbequina olive oil, captures all the peppery, refreshing zing of the Andalusian staple.
Our raw, unpasteurized vinegar is made with:
- Delicious but cosmetically challenged tomatoes, peppers, and cucumbers that would otherwise end up as food waste
- Chef José Andrés Arbequina olive oil
- Leeks, garlic, and heirloom apples
- Honey
- Purple dulse seaweed, black peppercorns, and a touch of sherry vinegar
Gazpacho Vinegar's sharp acidity and subtle hints of pimentón make it a versatile vinegar for dressing salads, brightening meat, poultry, or fish, and bringing a spark to anything on the grill.
